What could be better on these cold days than a hot soup?
Ciorbă de salată cu afumătură is a traditional Romanian sour green lettuce soup with smoked meat. It is made by cooking chopped lettuce leaves with chunks of smoked meat, such as bacon, sausage or pork fat, as well as carrots, green onions and green garlic.
The soup is then combined with a mixture of sour cream, sour milk or yoghurt, crushed garlic, salt and chopped herbs near the end. For extra flavour, an egg-milk mixture or strips of omelette with chopped herbs are usually added to the soup.
Tip!
Flavour the soup with sweet paprika to give it a more distinctive taste.
Ciorbă de salată cu afumătură is usually served hot or at room temperature, with plenty of chopped parsley and dill on top, and seasoned with vinegar.
