Last stop on this year’s fascinating cultural journey, and we dedicate this post to Azerbaijan, host country of the BSEC Chairmanship-in-Office for the first semester 2025.
So, let’s try an Azerbaijani side dish!
Levengi is a traditional stuffing made with walnuts, onions and dried fruits, such as raisins. This dish is typically flavoured with albukhara and alcha seasonings, which belong to the plum family.
Levengi is often used in a variety of fish and poultry dishes, which are traditionally served with rice pilafs.
Although the stuffing is usually associated with the region of Lankaran, it is also commonly prepared and consumed in the Shirvan and Sheki-Zagatala regions as well.
